If you ever have a can of diced tomatoes (or stewed tomatoes) sitting in your cupboard for a long time, this tomato & lentil soup recipe is perfect to make with it. To customize this soup to your spicy level, feel free to add more or less chilli flakes and/or jalapenos. You can add whatever spice you prefer!
This is a one-pot recipe that requires very little effort and is great for meal prepping (as it makes 6 servings!). This will keep in the fridge for 4-5 days and you can easily reheat to enjoy during the week. You can also freeze this to enjoy later.

The tomato & lentil soup recipe is vegetarian, plant-based, vegan, gluten-free, soy-free and nut-free.
How To Make Spicy Tomato Lentil Soup
To start making your tomato and lentil soup, begin washing, chopping, and dicing all the veggies. Then, heat oil in a large pot over medium heat and add onion, minced garlic, celery, carrot, bell pepper, and jalapeño to the pot. Sauté the vegetables until they are mostly cooked, stirring occasionally.
Next, add the tomato paste and saute for a couple more minutes. Rinse the lentils and add to the pot along with peeled and cubed potato, canned tomatoes, smoked paprika, Italian seasoning, chilli flakes (optional), and vegetable broth.
Cover the pot with a lid and bring to a boil over high heat. Once boiling, reduce the heat to low and let it simmer for about 30-40 minutes, or until the lentils and potatoes are fully cooked and tender.
If desired, add a large handful of baby spinach or chopped kale for even more greens (optional).
Just before serving, add lemon juice to enhance the flavours as well as salt and pepper to taste, if needed.
Serve hot and enjoy this hearty and spicy lentil tomato soup!

- 1 cup lentils dry, brown or green
- 1 can tomatoes diced or stewed, large can
- 2 tbsp tomato paste
- 1 tsp chili flakes omit or add more to adjust for your preferred spice level
- 1 jalapeño seeded & diced (optional for spice)
